I play MK8 against my kid, and never realized that the choice of carts makes a difference. Do the tires and glider make a difference too? I always just used the Mii Mercedes.
I rarely play it with him anymore, he prefers “Wreckfest” - which is a lot of fun too, but I find MK8 more challenging.
The choice of character, kart and tires matter a lot actually. The choice of glider matters a little.
If you’re somewhat good at drifting and getting stunts, maxing acceleration and handling over any other stat (which you can see in the kart selection menu, when you press + or -) is the way to go. My standard setup is yoshi + the bug car + roller tires + parachute. I think there are technically a few karts that are ever so slightly better but I‘m to vain to use them.
Handling males drifts way easier to control and acceleration makes boosts quicker and stronger, so you‘re essentially constantly drifting and getting boosts.

I always put handling on the minimum as I feel like I don’t need it due to drifting through anything. Speed is good for long straight stretches.
