Stardew Valley, let’s go!
I see you mentioned it already, but as far as I know KDE Connect is the best option available. It works on Windows, Mac, and Linux and is available on Android and iOS.
I could swear it did phone calls and such as well, but I may be misremembering.
If it really doesn’t fit the bill I hope someone else can offer a better option for you.

DuckStation is the recommended one these days.
Much easier to setup than ePSXe used to be back then.
This is the second time in two days I heard about this Mickey7 and when I went to check I already had them blocked. Can’t remember why though.
Who are they or what’s the problem with them?

Just to add to this:
Linux Mint is popular, because they are what Ubuntu could have been. They give you Ubuntu without all of Canonical’s anti-user decisions. They also have a version based on Debian if you really want to avoid Ubuntu completely.
Bazzite is also a very popular recommendation for gaming.

Check Anna’s Archive. If you’ve got a story or two in mind you can find almost anything.
That there is what most people would classify as a dildon’t.

Lol, no worries. Glad to hear it didn’t all go to waste.

Holy shit, sorry to hear. Hope you found some kind of use for all that hardware.

How do you know?

Crispy Doom is a fork of Chocolate that just ups the resolution a bit so the game doesn’t look horrible on modern displays.
He looks more like the Diablo 4 type to me.

Anna’s Archive is great if you know what you’re looking for. No pirating or VPN needed.
Ummet Ozcan is pretty good if you wanna introduce throat singing to someone who prefers techno.

Give it a lick
I SSH in and run an update manually, once a week.
I’m not knowledgable and comfortable enough to let updates happen automatically and feel like I could trust it to keep running. Not yet, anyway.
Edit: But at some point I might do what another commenter said and make sure security updates run automatically and check other updates weekly.
